Paahde at World Aeropress Championships 2024

Lisbon. The hidden gem of specialty coffee. 
I was once in Lisbon in 2019, but at that time I did not understand how great coffee culture lives and breaths in the city. And I think overall the city felt alive, colorful, and full of cheerful people wandering down the streets.. which is quite a big contrast to my hometown. Despite the tight schedule of the AeroPress Championships event, I was able to visit some great coffee places, but I know there are a lot more left to visit. To name one, near Parque Eduardo VII was this very nice breakfast place called “Tomorrow at 9 Café“ with lots of coffee and breakfast options. I highly recommend using different coffee shops as breakfast places especially if the hotel breakfast is not that good. 

Lisbon was truly beautiful!

World Aeropress Championships 2024 event:

Grant Gamble and Tim Williams with their team did phenomenal work organizing this year’s WAC event. It started by sailing with an old sailing ship around the coast of Lisbon. While admiring the beautiful view, we had an opportunity to get to know some of the 60 competitors and their coaches.
The next day we had a cupping session with the competition coffee roasted by Olisipo Coffee. Coffee itself was Ethiopian-washed coffee from the Guji region with some fruity and berry flavors, nice sweetness, and mild acidity. 

Recipe process:

Right after the cupping session, we had 24 hours to build our recipes. My workflow was to do AB tests focused on 5 major components: Water (Fin vs POR spring water), Extraction time, water/coffee ratio, Grind size, and water temperature. After 7 test setups and 6h of drinking coffee, I ended up with the recipe underneath. Feel free to test it, even though I did not make it through the first round. In our round the judges were not able to decide the winner (everyone was pointing to a different cup), so the Head judge Tim needed to make the last call. Congrats to my friend Siim Laas from Estonia who made it to the quarterfinals from our round!

Recipe:

Position: Inverted
Filter: 2x AeroPress filters rinsed
Dose: 16g
Grind: 32 clicks (Comandante C40 + red clix drivetrain)
Water: Spring Water 82 Celsius

1. Place AeroPress to a scale and set 16g coffee into the AeroPress.
2. Tare and start the timer.
3. Pour 100g water and swirl two times.
4. After 45s add 100g water to the total of 200g.
5. Stir 2 times and place the filtercap.
6. At 2:25 push the excess air out and flip the Aeropress on top of your vessel.
7. At 2:45 push slowly the coffee into the vessel.
8. Pour the coffee from the vessel to another 2 times and serve into your cup.
